Place the beef roast into a 4 to 6 quart slow cooker

Season the roast with salt and black pepper

Add 1 package of Italian dressing mix to the slow cooker

Pour in low-sodium beef broth and pepperoncini brine into the bottom of the slow cooker

Chop up some bell peppers and add them on top of the roast

Cook the roast in the slow cooker until tender

Shred the beef in the juices using two forks

Build the sandwich by piling shredded beef on a toasted bun

Add cheese and peppers to the sandwich if desired
