Heat a pan over medium-high heat and add oil.

Add 1 lb of ground beef to the pan and break it up with a spatula while browning.

Once browned, drain the excess liquid from the beef.

Add 1/4 cup of water and 1 packet of taco seasoning to the beef and bring to a boil.

Cook over medium heat until all the liquid has evaporated.

In a bowl, microwave 8 oz of cream cheese for 30 seconds to soften it.

Add 16 oz of sour cream to the softened cream cheese and mix until well combined.

Add another packet of taco seasoning to the cream cheese and sour cream mixture and mix well.

Shred 1.5 cups of cheddar cheese from a block.

In a 9x9 inch baking dish, spread the cream cheese and sour cream mixture evenly on the bottom.

Add the seasoned ground beef on top of the cream cheese layer, spreading it evenly.

Sprinkle 1.5 cups of shredded cheddar cheese over the ground beef layer.

Dice 2 Roma tomatoes, remove seeds, and sprinkle them over the cheese layer.

Top with chopped green onions for freshness.
