Cut a whole lobster in half and remove the inner meat.
Clean the inside of the lobster shell and devein the lobster meat.
Chop up a carrot, a tomato, and an onion, and set aside.
In a large pot, pour 3 cups of water and 1 cup of dry white wine, and bring to a boil.
Add the lobster shells, chopped vegetables, 1 bay leaf, some pepper, a dash of crushed red pepper flakes, 1 teaspoon of garlic, and thyme to the pot.
Reduce to a simmer and let it cook for 20 minutes.
Pour the lobster stock through a fine mesh strainer into a bowl and set aside.
In a large skillet over medium heat, add 1 tablespoon of olive oil, 2 tablespoons of chopped onions, and 1 teaspoon of minced garlic, and sautรฉ for about 1-2 minutes.
Add 1.5 cups of arborio rice and cook for 1-2 minutes.
Add 1/4 cup of dry white wine and then gradually add one-third to half of your lobster stock, cooking for about five minutes until mostly absorbed.
Gradually add the remaining lobster stock, using about 3 cups total for the risotto.
Turn off the heat when the risotto is finished cooking to avoid overcooking.
Add 3 tablespoons of butter, chopped lobster meat, 4 tablespoons of cream cheese, some pepper, 1/2 teaspoon of salt, and 1/4 to 1/2 cup of Parmesan cheese.
Add freshly chopped parsley, onion powder, garlic powder, crushed red pepper flakes, and Creole seasoning, mixing until well combined.
If the risotto looks dry, add about 1/4 to 1/2 cup of water.
