To prepare the sherbet, put sugar and water into a pan and stir. When the sugar melts, turn the heat on and boil by stirring. Turn the heat off after 5 minutes of boiling and add the lemon juice.

To make the dough, boil the water, butter and sugar in a pan.

Add the flour to the boiling water and mix with a spatula. Simmer the dough when it becomes very smooth.

Take the dough to the counter and cool it by kneading.

Add the eggs, starch, semolina and vinegar to the dough and keep knead.

Place a star shaped nozzle in a piping bag and put the dough into it.

Put the pan on low heat and pour the sunflower oil for frying. While the oil is still cold, cut the dough in the bag into pieces directly into the oil using scissors. To prevent the dough from sticking to the scissors, dip them in the oil after each cut.

Fry the tulumbas until they turn a nice color and become crispy. Once fried, use a colander to remove the tulumbas and drain the excess oil, then add them to the cooled sherbet.

The tulumbas will be ready after soaking in the syrup for at least 5 minutes.
