Tulumba

Cultural Context

Tulumba is a beloved Turkish dessert with roots in Ottoman cuisine, often enjoyed during celebrations and special occasions. Its name derives from the Arabic word for 'pump', reflecting its shape and texture. Traditionally, tulumba is made by frying a sweet dough and soaking it in syrup, creating a delightful contrast between the crispy exterior and the sweet, moist interior. Today, variations can be found across the Middle East and beyond, showcasing its widespread appeal and adaptability.

1

Transfer 3 lt water into a large pot over medium heat, add 3 kg sugar. When it starts boiling, add 1 tablespoon lemon juice and boil for another 20 minutes before turning the heat off.

2

In a separate pot, boil 500 ml water, then add 125 ml sunflower oil and 125 ml syrup. When the water is boiling, add the flour and stir on medium heat until it becomes unsticky and soft. Transfer the dough to another bowl to cool down.

3

Once cooled, transfer the dough to the mixing bowl of a stand mixer. Gradually add the 11 eggs, mixing well until smooth, then add the corn flour and mix until smooth again.

4

Fill a piping bag with the dough. Pipe the dough into room temperature oil (1.5 lt sunflower oil). Cut the dough with oiled scissors. Turn up the heat to low temperature.

5

When the dough turns fully golden brown, take them out and directly transfer them into the sweet syrup. Keep them in the syrup for a couple of minutes, then take them out and transfer to a plate.
