Tulumba Tatlisi is a beloved Turkish dessert with roots in the Ottoman Empire, often enjoyed during festive occasions and gatherings. This sweet treat consists of deep-fried dough soaked in syrup, symbolizing hospitality and celebration in Turkish culture. Today, variations of Tulumba can be found in various Middle Eastern and Balkan cuisines, showcasing its widespread appeal and adaptability.

Cut the top part of a water bottle to create a star-shaped nozzle for piping.
Boil 2 cups of water in a pan and add 2 tablespoons of butter or margarine and a pinch of salt.
Once boiling, add 2 cups of all-purpose flour and mix quickly until a smooth dough forms.
Set the dough aside to cool slightly.
In a separate saucepan, combine 1 cup of water, 3/4 cup of sugar, cardamom powder, and lemon juice to make the syrup and bring to a boil.
Blend in 3 eggs into the cooled dough, mixing until smooth after each egg addition.
Prepare the piping bag with the star nozzle and fill it with the dough.
Heat oil in a deep frying pan over medium heat until ready for frying.
Pipe the dough into the hot oil, cutting with scissors to desired lengths.
Fry for about 10 to 15 minutes, flipping occasionally until golden brown.
Remove from oil and toss in the syrup before serving, optionally garnishing with pistachio powder.
