Chickpea Hummus

Drain and rinse 1 can of chickpeas, saving the liquid (aquafaba).

Sprinkle 1.5 teaspoons of baking soda over the chickpeas and toss them in the microwave for about 1 minute.

Rinse the chickpeas under cold water and gently massage them to remove the skins, which should float to the top.

Discard the skins and place the skinned chickpeas into a food processor.

Add a few tablespoons of tahini, a few cloves of garlic, juice of half a lemon, a big pinch of salt, and about a quarter teaspoon of liquid smoke to the food processor.

Instead of water, add the saved aquafaba to the food processor and blend until smooth.

Label this version as 'LS' for liquid smoke and refrigerate while preparing the next version.

For the second version, repeat the process of draining, rinsing, and skinning the chickpeas with baking soda and microwave.

Use a Breville Smoking Gun to smoke the chickpeas with Applewood smoking chips for at least 25 minutes.

After smoking, blend the chickpeas with the same ingredients as before in the food processor until smooth.

For the third version, soak Applewood chips in water earlier in the day and prepare the grill with hot coals.

Add a pinch of olive oil to the chickpeas and place them in a metal wire mesh strainer covered with foil.

Toss some soaked Applewood chips onto the hot coals and place the strainer with chickpeas on the grill.

Cover and smoke the chickpeas for about 25 minutes, then blend with the same ingredients as before.
