Traditionally served as a dip or spread, it embodies the region's love for legumes and simple, wholesome ingredients. Today, hummus has gained global popularity, with countless variations and flavors appearing in restaurants and homes around the world.

Lime juice adds a zesty flavor, while vinegar is often more cost-effective.
Open the can of chickpeas and drain and rinse them.
Place the chickpeas in a small pot and cover with 2 inches of water.
Simmer for 20 minutes until the skins start floating.
Scoop off the skins and discard them, keeping only the tender chickpeas.
Drain and rinse the chickpeas again and transfer them to a food processor.
Add 1/4 cup of smooth tahini to the food processor, ensuring it is well mixed before adding.
Squeeze in 3-4 tablespoons of fresh lemon juice and add it to the food processor.
Add 1 clove of garlic, 1/2 teaspoon of salt, and 1/2 teaspoon of cumin to the mixture.
Start the food processor and let it run, scraping down the bowl as needed.
Add 2 tablespoons of ice water to help emulsify the mixture and let it run for about 5 minutes.
After 3 minutes, scrape down the bowl again and add 1 tablespoon of extra virgin olive oil.
Continue processing until the hummus is creamy and smooth.
Garnish with paprika and minced parsley before serving.
