Hummus, with roots in the Levant region, has been a staple of Middle Eastern cuisine for centuries. Traditionally served as a dip or spread, it embodies the region's love for legumes and simple, wholesome ingredients. Today, hummus has gained global popularity, with countless variations and flavors appearing in restaurants and homes around the world.
tahini

Open one can of chickpeas and add to the mixing bowl.
Shake well the tahini and add about 1/4 cup to the chickpeas.
Squeeze juice from two lemons, keeping the cut side up, but you may not need both.
Add two cloves of garlic to the mixture.
Sprinkle in a little salt and a dab of cumin.
If using soaked beans, mention adding baking soda to the cooking liquid with bay leaf and onion, but note that canned beans don't require this.
Drizzle in a little olive oil.
If the mixture is too thick, add a little water until the desired consistency is reached.
Taste the hummus and adjust seasoning if necessary.
Transfer the hummus to a beautiful bowl and describe the aroma as amazing.
Top the hummus with a copious amount of za'atar seasoning and drizzle with olive oil.
Add a puddle of cilantro or parsley in the center of the hummus.
Char pita bread over a gas stove or in a stainless steel or cast iron skillet over high heat, or under a broiler.
Rip the charred pita into pieces to serve with the hummus.
