Northern Style Pork Pie

Mix 800 g of minced or finely chopped pork shoulder, 400 g of pork belly, and 250 g of smoked bacon in a bowl.

Add 0.5 teaspoon of ground mace, 2 large pinches of nutmeg, 1 tablespoon of fresh chopped sage, 1 teaspoon of fresh chopped thyme, 0.5 teaspoon of salt, and 1 teaspoon of ground pepper to the meat mixture and mix well; set aside.

In a pan, melt 200 g of lard with 220 mL of water.

Once melted, add 575 g of plain flour and stir until combined; wait until the mixture cools.

Reserve a quarter of the pastry for the lid and decoration, then roll out the remaining pastry on a floured surface.

Press the rolled pastry into a 20 cm cake tin, smoothing it over the bottom and sides to form a case.

Fill the pastry case with the meat mixture, pressing it down firmly.

Roll out the reserved pastry for the lid, pinching it securely onto the top of the pie.

Roll out the remaining piece of pastry to cut out a decoration, preferably the Jurassic Park logo, and place it on top of the pie; secure with egg yolk.

Preheat the oven to 180°C (356°F) and bake the pie for 30 minutes.

Lower the oven temperature to 160°C (320°F) and cook for a further 90 minutes.

After 90 minutes, take the pie out and brush the top with egg yolk; bake for an additional 20 minutes until cooked through.

Remove the pie from the oven and let it cool on a wire rack.

Soak 6 gelatin leaves in cold water.

Bring 300 mL of chicken stock to a boil, then add the soaked gelatin leaves and stir until dissolved; let cool to room temperature.

Use a funnel to gradually pour the gelatin mixture into the top of the pie, ensuring it fills without overflowing.

Allow the pie to cool in the fridge overnight.

Once cooled, remove the pie from the tin and cut it in half to serve.
