Heat a large skillet over medium heat.
Add diced onions, minced garlic, and ground beef to the skillet; cook until the beef is browned, about 6-9 minutes.
Drain off the fat from the cooked beef.
In a large saucepan, combine the tomato sauce, chopped tomatoes, Italian seasoning, and black pepper; bring to a boil.
In a large pot, bring water to a boil and cook lasagna noodles for 10-12 minutes until tender but still al dente; drain and rinse with cold water.
In a bowl, mix ricotta cheese, beaten egg, and grated Parmesan cheese until well combined.
In a 2-quart rectangular baking dish, spread half a cup of meat sauce on the bottom.
Layer half of the lasagna noodles over the sauce, followed by half of the cheesy filling, half of the remaining meat sauce, and half of the mozzarella cheese.
Repeat the layers with the remaining ingredients, finishing with mozzarella cheese on top.
Place the baking dish on a baking tray and bake in the oven for 30 minutes.
Let the lasagna settle for 10 minutes before serving.
