White Chicken Chili

2 onions, chopped
2 lbs ground chicken
4 garlic cloves, diced
8 cups chicken stock
frozen spinach, chopped
cheddar cheese
chili powder
cumin
fennel seeds
oregano
2 cans great northern beans
1 teaspoon salt
2 teaspoons cumin
1 tablespoon ground fennel
2 teaspoons chili powder
4 tablespoons flour
1/2 teaspoon crushed red pepper
sour cream
avocado
cilantro
tortilla chips

Chop 2 onions and sauté them in olive oil until translucent.

Add 2 lbs of ground chicken to the sautéed onions and cook until browned.

Add 4 diced garlic cloves to the mixture, being careful not to burn them.

Prepare 8 cups of chicken stock and set aside.

Chop frozen spinach and add it to the pot, allowing it to wilt into the chili.

Grind fennel seeds using a mortar and pestle to break them down.

Add the ground fennel, chili powder, cumin, and oregano to the pot.

Rinse and drain 2 cans of great northern beans and add them to the pot.

Stir in 4 tablespoons of flour to thicken the chili.

Add the chicken stock and mix well to combine all ingredients.

Season with 1 teaspoon of salt and 1/2 teaspoon of crushed red pepper.
