White Chicken Chili in the Crock Pot - Gluten Free Chili Recipe 🌶️

Add 1 medium diced onion to the crock pot.

Add 1 bell pepper (any color) to the crock pot.

Add 2 jalapeno peppers (seeds removed) to the crock pot.

Add minced garlic to the crock pot.

Add seasonings: 1 teaspoon cumin, 1 teaspoon oregano, 1 teaspoon chili powder, 1 teaspoon Chipotle smoked paprika, salt, and pepper to the crock pot and mix well.

Pat dry 4 boneless skinless chicken breasts with a paper towel and season with salt, pepper, garlic powder, onion powder, and chili powder.

Pour chicken stock over the chicken and vegetables in the crock pot.

Cover the crock pot and cook on low for 7 to 8 hours or until the chicken and vegetables are tender.

After 7 hours, remove the chicken and shred it with two forks.

Return the shredded chicken back to the crock pot.

Adjust seasonings if needed.

Add 1 can of rinsed and drained garbanzo beans to the crock pot.

Add 1 can of coconut milk to the crock pot and stir.

Cook on high for about 10 to 15 minutes.

Add lime juice to the chili.

Optionally add parsley or cilantro and stir.

Let simmer for a couple more minutes.
