White Chicken Chili

1 tablespoon olive oil
1 pound boneless skinless chicken breast, cut into bite-sized pieces
1/2 cup chopped onion
2 cloves chopped garlic
1 1/2 teaspoons ground cumin
1/2 teaspoon chili powder
1/4 teaspoon cayenne pepper
1/4 teaspoon black pepper
3 cups chicken stock
2 cans cannellini beans, drained
1 can diced green chilies
1 cup frozen corn
1/2 package cream cheese
1/4 cup chopped cilantro
1/4 teaspoon salt

Set a pot over medium heat and add 1 tablespoon of olive oil.

Add 1 pound of boneless skinless chicken breast cut into bite-sized pieces and stir.

Add 1/2 cup of chopped onion and 2 cloves of chopped garlic, stir and cook until the meat starts to brown (about 10 to 12 minutes).

Add 1 1/2 teaspoons of ground cumin, 1/2 teaspoon of chili powder, 1/4 teaspoon of cayenne pepper, and 1/4 teaspoon of black pepper. Stir and cook for a couple of minutes.

Add 3 cups of chicken stock, 2 cans of drained cannellini beans, 1 can of diced green chilies, and 1 cup of frozen corn. Stir and bring to a boil.

Once boiling, lower the heat to medium and let it cook for 15 minutes.

After 15 minutes, turn off the stove and stir in 1/2 package of cream cheese cut into big cubes and 1/4 cup of chopped cilantro until the cream cheese is melted.

Add 1/4 teaspoon of salt and stir to combine.
