3 boneless skinless chicken thighs
1 can black beans
2 cans whole kernel corn (15 ounces each)
1 can diced Rotel with tomatoes and green chilies
1 teaspoon cumin
1 teaspoon onion powder
1 tablespoon chili powder
1 packet Hidden Valley ranch seasoning
salt to taste
pepper to taste
1 block (8 ounces) Philadelphia cream cheese
1 block (16 ounces) Velveeta queso blanco

Add chicken thighs to the crock pot.

Rinse and add black beans to the crock pot.

Add two cans of whole kernel corn to the crock pot.

Add diced Rotel (drained) to the crock pot.

Add 1 teaspoon of cumin, 1 teaspoon of onion powder, and 1 tablespoon of chili powder to the crock pot.

Add ranch seasoning packet, salt, and pepper to taste.

Stir the mixture well, ensuring the chicken is at the bottom.

Place 8 ounces of Philadelphia cream cheese on top of the mixture.

Cover and cook on low for 8 hours or high for 4 hours.

After cooking, stir the mixture and shred the chicken.

Add half of a 16-ounce block of Velveeta queso blanco, cubed, to the chili.

Stir and let cook for an additional 30 minutes.
