The dish has evolved over time and is now enjoyed in various forms, often with a topping of mashed potatoes. It is a comforting meal commonly served in homes and pubs across the UK, especially during colder months.

Start by dicing a medium onion and set it aside.
In a pan, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium-high heat until melted.
Add the diced onion to the pan and sauté for about 2-4 minutes until softened.
Add 1 pound of ground lamb and 1 pound of ground beef to the pan and brown the meat, breaking it apart as it cooks.
Cook the meat until moisture is mostly gone, then add 1/3 cup of flour and cook for 3-4 minutes to remove the raw flour taste.
Stir in 2 teaspoons of minced garlic, 2 teaspoons of freshly chopped rosemary, 1 teaspoon of paprika, and 1/8 teaspoon of cinnamon.
Pour in 2 and 1/2 cups of water (or stock if available) and add 1 tablespoon of ketchup, stirring to combine.
Let the mixture come to a simmer and cook until it thickens.
Meanwhile, peel and cube 2 and 3/4 pounds of russet potatoes and boil them until tender.
Once the potatoes are cooked, drain them and return them to the pot.
Add 1 egg yolk, 2 tablespoons of milk, 1/4 cup of cream cheese, and 4 oz of Irish cheddar cheese to the potatoes, along with salt and pepper to taste.
Mash the potatoes until smooth and set aside to keep warm.
Check the meat mixture for seasoning and adjust if necessary, then stir in 12 oz of frozen peas and carrots.
Spoon the meat mixture into a 9x12 casserole dish and spread it evenly.
Top the meat mixture with the mashed potatoes, spreading them evenly across the top.
Use a fork to create texture on the potato topping, ensuring it reaches the edges of the dish.
Preheat the oven to 375°F (190°C) and bake the shepherd's pie for 25-30 minutes until the top is golden brown.
If the top isn't browning, it may take up to 45 minutes; check for bubbling.
Once done, let the shepherd's pie rest for 15-20 minutes before serving to set up properly.
