Marinate the pig with soy sauce and vinegar for several hours or overnight.
Preheat the oven or prepare the charcoal for roasting.
Skewer the pig with bamboo skewers to hold it in place.
Place the pig on a spit or in a roasting pan.
Roast the pig over medium heat, turning occasionally, until the skin is crispy and golden brown, about 4-6 hours.
Baste the skin with oil and sugar mixture every hour to enhance crispiness.
Check the internal temperature; it should reach at least 160°F.
Once done, remove from heat and let it rest for 15-20 minutes.
Carve the pig and serve with dipping sauce.
