In a large bowl, combine 2 pounds of ground beef, 2 eggs, 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 teaspoon of paprika.
Grate one onion and add it to the bowl.
Finely chop a bunch of parsley and add it to the mixture.
Mix everything together until well combined.
Place five medium potatoes in a saucepan, fill with water, add 1 teaspoon of salt, cover, and cook over medium heat for about 30-40 minutes.
Lay out a sheet of parchment paper and press the ground beef mixture into a square shape.
In a frying pan, melt about 30 grams of butter, grate two cloves of garlic, and add them to the pan.
Fry the garlic until fragrant, then chop 7 ounces of mushrooms and sauté them in the pan until golden.
Chop 5 ounces of spinach and sauté with the garlic until wilted.
Spread the spinach over the ground beef, then add the sautéed mushrooms and 5 ounces of Emmental cheese on top.
Carefully form the meat into a roll using the parchment paper to guide it.
In a small bowl, combine 2 tablespoons of ketchup, 4 tablespoons of soy sauce, 1 teaspoon of green Dijon mustard, and 2 tablespoons of honey to make the marinade.
Brush the meat roll generously with the marinade, wrap it in foil, and place it in the oven preheated to 360°F (180°C).
Bake for one hour.
Check the potatoes for tenderness, drain, and return them to the saucepan.
Add 2 fluid ounces of cream, 30 grams of butter, and 1 ounce of grated Parmesan cheese to the potatoes and mash until smooth.
10 minutes before the roll is done, take it out of the oven, open the foil, and brush it with the remaining marinade.
Put it back in the oven uncovered for another 10 minutes to caramelize the top.
Take the meat roll out of the oven, slice it into thick pieces, and serve with mashed potatoes and cherry tomatoes.
