1

Cook 6 slices of bacon in a pan until crispy.

Remove bacon and drain fat, leaving drippings in the pan.

3

Add 1.5 pounds of ground chuck to the pan and brown it.

4

Drain the fat from the ground chuck.

5

Melt 5 tablespoons of butter in the pan.

6

Add 2 cups of finely diced onions, 1 cup of finely diced carrots, and 1 cup of finely diced celery; cook for about 10 minutes until tender.

7

Add 3 medium diced potatoes to the vegetables.

8

Add 3 cloves of finely chopped garlic, 0.5 teaspoon of basil, 1 teaspoon of oregano, and 2 teaspoons of parsley; stir to combine.

9

Add 4.5 tablespoons of flour and cook for a minute.

10

Add 5 cups of beef stock and return the ground chuck and bacon to the pan.

Add 2 cups of milk and bring to a simmer, cooking until potatoes are tender, about 20 minutes.

Add 2 tablespoons of bacon grease for flavor.

14

Turn off the heat and stir in 8 ounces of grated medium cheddar cheese until melted.

15

Serve hot, garnished with chives.
