2 large room temperature eggs
1/2 cup vegetable oil
1/2 cup milk
1 teaspoon vanilla extract
3/4 cup white sugar
2 cups all-purpose flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 teaspoons ground cinnamon

In a large bowl, add 3 small ripe bananas and mash them well with a fork.

Add 2 large room temperature eggs to the mashed bananas and stir quickly.

Pour in 1/2 cup of vegetable oil and mix.

Add 1/2 cup of milk and 1 teaspoon of vanilla extract (using a half teaspoon spoon twice) and mix all wet ingredients together.

In a separate bowl, combine 2 cups of all-purpose flour, 2 1/2 teaspoons of baking powder, 1/2 teaspoon of salt, and 1 1/2 teaspoons of ground cinnamon. Whisk until well combined.

Gently add the dry ingredients into the wet ingredients and mix with a rubber spatula until just combined, being careful not to over mix.

Grease a bread pan and pour in the batter.

Bake at 350 degrees Fahrenheit for 1 hour and 20 minutes.

After 1 hour, cover the bread pan with aluminum foil to prevent burning while the middle cooks, then return to the oven for an additional 20 minutes.
