Preheat the oven to 375F.
Prepare a muffin/cup cake tray.
Roll out the puff pastry sheet and cut it to fit the muffin tray.
Place the puff pastry in the muffin tray.
In a bowl, whisk together the 3 eggs and season with salt, pepper, and chili flakes.
Add chopped onions, chopped parsley, shredded cheese, chopped turkey slices, and chopped sausage to the egg mixture.
Pour the mixture into the puff pastry cups.
Brush the edges of the puff pastry with the egg wash.
Bake in the preheated oven for 20 minutes.
