Grab a large pot or Dutch oven and get it on medium-high heat.

Brown the bacon until crispy, then pull it out and set it aside, leaving the bacon fat in the pot.

Bring the mixture to a boil, then reduce to a simmer, leaving it uncovered to reduce and thicken naturally for 45 minutes to an hour, stirring occasionally.

If the chili looks too thin, mash a few beans against the side of the pot or add a little tomato paste to thicken it.

Scoop hot rice into a bowl, ladle the thick chili on top, and add a big dollop of mayonnaise and shredded cheddar cheese. Garnish with chopped green onions on top of the mayo.
