Ackee and Saltfish with Boiled Green Bananas

Ackee and saltfish is Jamaica's national dish, originating from the days of colonialism when saltfish was a staple for enslaved Africans. The dish combines the unique flavor of ackee, a fruit native to West Africa, with the savory taste of salted cod. Traditionally enjoyed for breakfast, it has become a beloved meal at any time of day, often served with boiled green bananas or dumplings. This dish reflects the rich cultural heritage of Jamaica and its fusion of African, European, and indigenous influences.

Canned tuna is more affordable and still provides protein.
olive oil

💰Cheaper: vegetable oil
Vegetable oil is less expensive and works well for sautéing.
Take green cooking bananas and cut off the top and bottom.
Make a cut down the side of the banana to help peel it later.
Fill a pot with water and bring it to a boil.
Boil the green bananas for about 7-8 minutes until they start to soften.
Turn off the stove, drain the bananas, and allow them to cool for peeling.
Peel the bananas using the cuts made earlier and cut them into bite-sized pieces.
In a wide saucepan over medium heat, add 3 tablespoons of olive oil.
Add the prepared salted cod to the hot oil and let it cook to flavor the oil.
Add black pepper, thinly sliced medium onion, and 2 cloves of garlic to the pan.
Add 2 Birdseye peppers for heat, or substitute with scotch bonnet if available.
Stir the mixture and lower the heat to prevent burning.
Gather fresh thyme and parsley from the backyard to add to the dish.
Add the thyme and parsley to the pan with the salted cod mixture.
Incorporate cherry tomatoes into the mixture.
Add the previously boiled and cut green bananas to the pan.
Gently stir the mixture to combine without breaking the ackee.
Taste the dish and adjust salt as needed.
Garnish with fresh parsley before serving.
