Boil 6 ounces of salt fish three times to remove excess salt, draining the water and refilling with fresh water each time.

While the salt fish is boiling, cut up onion, garlic, green and red sweet peppers, tomato, and a few sprigs of thyme.

Optionally, cut up a scotch bonnet pepper to add in.

After the third boil of the salt fish, add canned ackee (Grace brand) to the pot and boil for 1-2 minutes to scald it, then drain the water.

Heat up a frying pan with oil and fry the chopped seasoning veggies on high heat until they begin to soften, then reduce the heat to medium.

Add garlic powder, onion powder, black pepper, and all-natural all-purpose seasoning to the frying pan.

Add a little bit of water to the frying pan to create a sauce before adding the ackee and salt fish.

Gently fold the ackee and salt fish into the vegetables, being careful not to stir too much to prevent the ackee from breaking apart.

Cover the pan, turn the heat down to low, and let it simmer for about five minutes.
