Foxtail Millet Porridge with Jaggery

Traditionally enjoyed for its nutritional benefits, this dish combines the earthy flavor of millet with the sweetness of jaggery, reflecting the island's agricultural heritage. In modern cuisine, variations include adding fruits and nuts, making it a versatile dish enjoyed by many across the globe.

Rinse foxtail millet under cold water until the water runs clear.
Soak the rinsed millet in water for 30 minutes.
Drain the soaked millet and transfer it to a pot.
Add water to the pot and bring to a boil over medium heat.
Reduce heat and simmer the millet for 15-20 minutes until tender.
Stir in coconut milk and continue cooking for 5 minutes.
Add jaggery and mix until fully dissolved.
Season with a pinch of salt and cardamom.
Remove from heat and let it sit for a few minutes to thicken.
Serve warm, garnished with sliced banana, cashews, and raisins.
Sprinkle with cinnamon and a dash of vanilla extract before serving.
