Coat the 3 lb boneless chuck roast generously with Worcestershire sauce.

Preheat the ReTech RT300 pellet grill to 250°F and wait about 15 minutes for it to reach temperature.

Add the chuck roast to the grill and smoke for about 2.5 to 3 hours, looking for color and texture.

While the chuck roast is smoking, prepare the braising liquid in a large metal pan by adding chopped onion, whole garlic cloves, bay leaves, Worcestershire sauce, and a bottle of Guinness.

After smoking for 3 hours, remove the roast from the grill and place it into the pan with the braising liquid, tightly cover with foil.

Increase the grill temperature to 325°F and cook for another hour and a half.

After an hour and a half, remove the pan from the grill, add chopped celery, carrots, and whole red potatoes, cover with foil, and return to the grill for another hour to two hours until the meat and vegetables are fork tender.

Once done, place everything on a platter and pour the rich pan juices over the roast.
