Heat an 8-inch non-stick pan on medium heat.
Crack 3 eggs on a flat surface into a bowl.
Add salt to the eggs.
Use a fork to vigorously whisk the eggs until homogenized, breaking the yolks and incorporating the whites.
Add 1 tablespoon of butter to the heated pan and wait for it to melt without browning.
Pour the eggs into the pan immediately after adding butter.
Stir the eggs with a rubber non-stick spatula in a figure 8 motion while shaking the pan to create small curds.
When the eggs start to thicken, push them towards one end of the pan and let them sit briefly.
Fold the omelet by pushing the edge of the egg towards the center and flipping it onto a plate.
Prepare a side salad with arugula, sliced radishes, herbs, olive oil, and red wine vinegar, tossing with hands.
For soft scrambled eggs, slice chanterelle mushrooms evenly after washing them.
Heat a pan and add butter, then add the sliced mushrooms once the butter sizzles.
Cook the mushrooms until browned, then add salt at the end to flavor them.
Chop chives finely for garnish.
In a bowl, crack 4 eggs on a flat surface and whisk with a fork, adding salt.
Add 2 tablespoons of butter to a medium heat pan.
Pour the eggs into the pan and stir gently to form medium curds, allowing raw egg to cook into sheets.
Remove the eggs from the heat 30 seconds before they seem done to prevent overcooking.
Plate the soft scrambled eggs and top with chanterelles and chives, finishing with crunchy salt.
For the fried egg, heat a pan on medium-high heat until hot.
Add olive oil to the pan for frying the egg.
