Cut the apricots in half and remove the pits.
Slice the apricot halves into smaller wedges.
In a mixing bowl, combine quark (Topfen), vanilla extract, powdered sugar, vanilla pudding powder, and an egg.
Whisk the mixture until smooth.
Roll out the store-bought puff pastry on a surface.
Spread the quark mixture evenly on the puff pastry, leaving a generous border at the top.
Place the apricot wedges on top of the quark mixture.
Fold the sides of the puff pastry over the filling, then fold the bottom up and press to seal.
Carefully transfer the strudel to a baking sheet lined with parchment paper.
Beat an egg and brush it over the top of the strudel.
Sprinkle sliced almonds on top of the strudel.
Preheat the oven to 180°C (356°F) with hot air setting.
Bake the strudel for 40 minutes until golden brown.
Allow the strudel to cool slightly before slicing.
