Start with good quality rock shrimp, uncooked and deveined, and save the shells for flavor.

In a pot, add 3/4 cup of white wine and the saved shrimp shells. Simmer to extract flavor without boiling.

Preheat a large skillet over medium heat.

Add 2 tablespoons of Kerrygold butter and 2 tablespoons of olive oil to the skillet and let melt.

Add 3 minced garlic cloves and chopped green onion or shallot to the skillet and sauté until translucent.

Add the seasoned shrimp to the skillet and sauté for 2-3 minutes until they start to turn pink, then remove from heat.

In the same skillet, add 2 more tablespoons of Kerrygold butter and the juice of 1 lemon, stirring to combine.

Pour the simmered wine and shell mixture back into the skillet and reduce by half over low heat.

Return the shrimp to the skillet, stirring to combine with the sauce.

Add pre-cooked linguine pasta to the skillet and toss everything together for 2-3 minutes until warmed through.

Serve in a bowl, topping with grated fresh parmesan, red pepper flakes, and optional parsley. Use reserved pasta water to thicken the sauce if needed.
