Waterzooi Chicken Stew

Cultural Context

Originating from the coastal regions of Belgium, Waterzooi is a traditional stew that highlights the region's fresh ingredients, particularly chicken or fish, simmered with vegetables in a creamy broth. Historically, it was a dish for fishermen, evolving into a beloved family meal. Today, variations exist, with some using fish instead of chicken, reflecting the dish's adaptability and enduring popularity across Belgium and beyond.

1

Prepare the ingredients: wash and dice the leek, chop the celery sticks, and peel and chop the carrot.

2

In a Dutch oven, melt 2 ounces of butter over low heat.

3

Add the chopped vegetables (leek, celery, and carrot) to the pot and cook for 10 minutes, stirring occasionally.

4

Add 8 ounces of diced chicken to the pot and cook for an additional 10 minutes, stirring frequently.

5

Pour in 25 ounces of chicken broth and cover the pot.

6

Season with salt and pepper to taste, being cautious as the broth may already be salted.

7

Cover the pot and let it cook for 30 minutes on low heat.

After 30 minutes, turn off the heat and pour in 2 ounces of heavy cream, mixing well.

9

Serve in soup plates and optionally sprinkle with parsley.
