Preheat the oven to 180°C (350°F).
In a mixing bowl, cream together butter and sugar until light and fluffy.
Add eggs one at a time, mixing well after each addition.
Stir in vanilla extract and mix until combined.
In a separate bowl, combine flour and baking powder.
Gradually add the dry ingredients to the wet mixture, alternating with milk, until a smooth batter forms.
Fold in coconut flakes gently until evenly distributed.
Grease a baking dish and pour half of the batter into it, smoothing the top.
Spread a layer of jam evenly over the batter.
Pour the remaining batter on top, smoothing it out again.
Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted comes out clean.
Allow to cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
Dust with powdered sugar before serving.
Optionally, add food coloring to the batter for a colorful presentation.
