In a large bowl, add 400 g of plain flour and 200 g of double O flour.

Add 7 g of yeast, a pinch of salt, 40 g of sugar, and 1 teaspoon of cinnamon.

In a separate bowl, crush 2 pieces of mytia and 3 mey seeds, then add to the mixture along with 60 ml of vegetable oil.

Mix everything with your hands to create a bread-like texture.

Add 300 ml of Seven Up or Sprite and mix until a smooth silky dough forms.

Cover the dough with clean film and leave it to rise for 30 minutes.

In a medium-sized bowl, add 600 g of deini, 200 g of sugar, and 1 tablespoon of cinnamon, and stir until smooth.

Check the dough and divide it into 8 pieces of 122 g each, rolling them into balls and covering them to rise for another 30 minutes.

Make the syrup by adding 25 g of sugar, 50 g of honey, and 60 ml of water to a pan and heating until dissolved, then let it cool.

Roll out each dough ball into a rectangle, add at least 3 tablespoons of the deini filling, and fold the dough over.

Roll the dough into a twisted shape and place on a baking tray lined with baking paper.

Bake in a preheated 170°C oven for 20 minutes or until golden brown, optionally glazing with leftover filling after 15 minutes.

Cool on a rack and brush the tops with syrup.
