Preheat the oven to 425 degrees Fahrenheit.
Cut the corn into smaller pieces and set aside.
Scrub the russet potatoes well and slice them into thick pieces, about half an inch thick.
Add the sliced potatoes to cold water and parboil for about 10 minutes once it comes to a boil.
In a bowl, prepare the lime tahin butter sauce by mixing minced garlic, chopped scallions, fresh cilantro, hot sauce, tahin, and the juice of one lime.
Prep the shrimp by rinsing it in cold water; it can be semi-frozen to help keep it tender during cooking.
Prepare parchment paper bags for the seafood packs.
In each parchment paper bag, layer the ingredients: add some parboiled potatoes, onion, jalapeno, lime, corn, sausage, and shrimp.
Add some of the prepared butter sauce to each bag and optionally shake in more tahin.
Fold the parchment paper bags securely by folding them two to three times to keep them closed.
Place the bags on a baking sheet and bake in the preheated oven for about 20 minutes.
After baking, carefully open the bags to avoid steam burns and serve on a plate.
