Gather ingredients: crab leg clusters, jumbo shrimp, sweet fennel sausages, red potatoes, corn on the cob, onions, lemon wedges, Zatarain's shrimp and crab boil liquid, Old Bay seasoning, kosher salt, paprika, herbs, and garlic.

Pressure cook 6 sweet fennel sausages for 12 minutes with 2 cups of water.

Prepare flavor sash using cheesecloth: add lemon, garlic (cut in half), bay leaves, thyme, and sage, then tie it up.

Peel and quarter 2 onions, keeping the wedges together.

After 12 minutes, vent the pressure cooker and remove the sausages, then cut them into 1-inch pieces.

Check ingredients: 6 corn on the cob, 3 cups of cleaned and halved red potatoes, 6-7 lemon wedges, flavor sash, quartered onions, and cut sausages. Prepare shrimp and crab for layering.

Begin boiling process by adding 6 cups of water to the pressure cooker and setting it to sauté.

Add 1 tablespoon of Zatarain's shrimp and crab boil, 2 tablespoons of Old Bay, 1 teaspoon to 1 tablespoon of kosher salt, and 1 tablespoon of paprika to the water and stir.

Add onion quarters and flavor sash to the mixture, along with a couple of lemon wedges and some squeezed lemon juice.

Once the mixture reaches a rolling boil, add 3 cups of red potatoes and let them cook for 5 minutes.

Ladle some of the broth into the bowl with the shrimp and crab to marinate.

After 5 minutes, add the sausage pieces and corn to the pot, then layer the crab clusters on top and finally the shrimp.

Seal the Instant Pot and set it to manual for 5 minutes.

After 5 minutes, vent the pot and remove the lid to check the seafood.

Remove the seafood boil from the pot using a colander.
