Preheat oven to 400 degrees.
Line the cold butter pie crust with foil and fill with dry beans to the top of the pie pan.
Pre-bake the crust for 10 minutes.
Remove the foil and beans and cool the crust.
In a small pan, heat the whole milk and half-and-half with the white sugar until steaming with small bubbles forming around the edge.
In a bowl, whisk together the eggs, egg yolks, and vanilla.
Slowly pour the heated milk mixture into the egg mixture while whisking continuously.
Pour the custard mixture into the pre-baked pie crust.
Sprinkle the top with nutmeg.
Bake at 325 degrees for 35-37 minutes until a knife comes out clean from the center.
Cool and serve warm or cold.
