Roughly chop 3 anchovy fillets on a chopping board.

Grate 1 clove of garlic.

Place the chopped anchovies and grated garlic in a bowl and set aside.

Use a tea towel to secure the mixing bowl in place to prevent it from moving while whisking.

In a mixing bowl, place 1 egg yolk, 30 ml of lemon juice, and 5 g of dijon mustard and whisk until fully incorporated.

Gradually pour in 190 ml of neutral flavored oil while whisking continuously until all the oil is incorporated and the mixture thickens like mayonnaise.

Add the chopped anchovies, grated garlic, and 15 g of finely grated Parmesan cheese to the mixture and whisk everything together.

Season with salt and pepper to taste.

If desired, add a few drops of warm water to adjust the consistency of the dressing, whisking until it reaches the desired thickness.
