Caesar Salad Dressing

Coddle the eggs by dropping whole eggs into boiling water for about one minute.

Retrieve the eggs from the boiling water and crack them into a vessel.

Use an immersion blender to blend the eggs.

Slowly stream in the oil while blending to create a mayonnaise-like consistency.

Add garlic, salt, and white pepper to the mixture.

If you don't have white pepper, you can substitute with black pepper or a little Tabasco.

Add dry mustard (or substitute with prepared mustard) to the mixture.

Add anchovies to the mixture.

Continue blending with the immersion blender while streaming in the oil.

Use a blend of olive oil and corn oil (or canola oil) for the dressing.

Add vinegar, Worcestershire sauce, and lemon juice to the mixture.

Finish with the balance of red wine vinegar.
