Ensure the oil is poured in very slowly, closer to a drop, to create a stable emulsion.

Whisk constantly and take breaks to incorporate all the oil before adding more.

Notice the mixture thickening as the oil is added.

Once all the oil is incorporated, grate in Parmesan cheese and add freshly ground black pepper.

Whisk to combine and taste to adjust for seasoning.
