Caesar Salad Dressing
Cultural Context
Caesar salad dressing is a classic component of the Caesar salad, which is believed to have originated in Mexico but has become a staple in Italian cuisine.
Combine 1 cup mayonnaise and optionally 1/2 cup Greek yogurt in a bowl.
Grate in 1 large clove of garlic (or 2 small).
Add 1 teaspoon Dijon mustard, 1 tablespoon Worcestershire sauce, and 2 tablespoons freshly squeezed lemon juice.
Season with 1/4 teaspoon salt and freshly ground black pepper.
Mix in 1/4 cup finely grated Parmesan cheese.
Optionally add 1 teaspoon of mashed anchovies.
Whisk all ingredients together until well combined.
Taste and adjust seasoning, adding more salt if needed.
Refrigerate the dressing until ready to use.
Wash and break romaine lettuce into bite-sized pieces.
Place lettuce in a bowl and drizzle with the dressing.
Toss the lettuce to coat with dressing.
Top with additional grated Parmesan cheese and freshly ground black pepper.
Toss again and serve.
