Classic Beef Chili

Heat olive oil in a large pot over medium heat until shimmering.
Add chopped onion and bell pepper; sauté until softened, about 5 minutes.
Stir in minced garlic; cook until fragrant, about 1 minute.
Add ground beef; cook until browned, breaking it apart with a spoon, about 5-7 minutes.
Drain excess fat from the pot.
Stir in canned tomatoes, kidney beans, chili powder, cumin, paprika, oregano, salt, and black pepper.
Pour in beef broth; bring to a boil.
Reduce heat to low; simmer uncovered for 30-40 minutes, stirring occasionally.
Taste and adjust seasoning as needed.
Stir in lime juice before serving.
Serve hot, topped with cheddar cheese if desired.
