Mixed Berries Pavlova

Cultural Context

Pavlova is a classic dessert that originated in Australia and New Zealand, named after the Russian ballerina Anna Pavlova. This light and airy meringue dessert is traditionally topped with whipped cream and fresh fruit, making it a popular choice for celebrations and gatherings. The use of mixed berries adds a vibrant touch and balances the sweetness of the meringue. Today, Pavlova is enjoyed in various forms around the world, often adapted with seasonal fruits and flavors.

1

In a bowl, mix together 1 cup granulated white sugar and 1 tablespoon cornstarch until combined.

2

Set the sugar mixture aside.

3

In a clean bowl, add 4 large egg whites and begin whisking until reaching the ribbon stage.

4

Gradually sprinkle in the sugar mixture in four additions, whisking until dissolved after each addition.

5

Once all the sugar is incorporated, add 1 teaspoon of white vinegar and 1 teaspoon of vanilla extract, and continue whisking until stiff peaks form.

6

Transfer the meringue onto a lined baking sheet with a silicone mat or parchment paper, shaping it into a disc about 2 to 2.5 inches high and 6 to 7 inches wide.

7

Place the meringue in a preheated 250°F oven and bake for 1 hour.

8

After 1 hour, turn off the oven, crack the door, and let the meringue cool in the oven for 1 hour.

9

Once cooled, top the meringue with lightly sweetened whipped cream and fresh strawberries.

10

Optionally, heat a little apricot preserves in the microwave with a couple of drops of water and brush it over the strawberries for shine.
