Prepare a 1.5 liter Pyrex basin by greasing it with lard.
Cut a circle of greaseproof paper to fit the bottom of the basin and grease it with lard.
Place the greaseproof paper in the bottom of the basin.
Cut a larger piece of greaseproof paper to cover the top of the basin.
Prepare a piece of tin foil larger than the greaseproof paper to cover the top of the basin.
Tie the tin foil in place with string.
In a bowl, combine 75 g light brown sugar, 75 g suet, 75 g self-raising flour, and 75 g breadcrumbs.
Prepare the apples by topping, tailing, peeling, coring, and slicing them into small chunks.
Zest the lemon into the bowl with the dry ingredients.
Add the apple chunks to the mixture and combine.
Beat 2 eggs in a glass and add them to the mixture.
Add 1 tablespoon of golden syrup to the mixture and combine until well mixed.
Spoon the mixture into the prepared basin.
Cover the basin with the greaseproof paper and tin foil, tying it securely with string.
Place a saucer upside down in a large pan and set the basin on top of it.
Fill the pan with boiling water halfway up the basin.
Cover the pan with a lid and simmer for 1.5 hours.
Check the pudding with a skewer to ensure it is cooked through.
Carefully remove the pudding from the water and let it cool before serving.
