Carrot salad has roots in various cuisines around the world, often celebrated for its refreshing crunch and vibrant color. In many Mediterranean countries, it is a staple side dish, showcasing the versatility of carrots. Modern variations may include different nuts, seeds, or spices, making it a popular choice for health-conscious eaters everywhere.
Remove the skin from 2 small carrots and wash them with plenty of water.
Cut the carrots into slices and then into julienne strips.
In a pot, add water to cover the carrots and cook for 8 minutes.
Cut 1 small white onion in half and then into thin slices to obtain julienne cuts.
Chop 3 cloves of garlic very finely and reserve.
Chop 3 stalks of green onion very finely and reserve.
Chop 1/4 bunch of fresh parsley very finely.
In a salad bowl, combine the cooked carrots, sliced onion, chopped garlic, chopped green onion, and chopped parsley.
Add 2 tablespoons of apple cider vinegar, 2 tablespoons of extra virgin olive oil, a pinch of salt, and a pinch of ground black pepper to the salad bowl.
Mix all the ingredients until well integrated.
Refrigerate the salad before serving.
