Mix the spices together in the oil until fragrant.
Scoop out the soft garlic from the boiling water and smash it into the spice mixture.
Cook the carrots in boiling water for 15-20 minutes until soft, then drain them.
Mix the drained carrots into the spice paste in the pan and stir to combine.
