Shred the carrots using a grater.
Add olive oil, shredded carrots, and salt to a frying pan.

After the carrots have cooled, add pepper, smashed garlic, walnuts, and yogurt to the bowl.

Transfer the mixture to a flat plate for presentation.
Drizzle olive oil on top and garnish with parsley if desired.
Refrigerate for approximately one hour before serving.
