Ingredients

  • 1 cup sushi rice
  • 1 1/4 cups water
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 4 sheets nori (seaweed)
  • 1/2 cucumber, julienned
  • 1 avocado, sliced
  • 1/2 lb cooked shrimp, sliced
  • Soy sauce for serving
  • Wasabi for serving
  • Pickled ginger for serving

Instructions

  1. 1Rinse the sushi rice under cold water until the water runs clear.
  2. 2In a medium saucepan, combine the rinsed rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.
  3. 3Remove from heat and let it sit, covered, for 10 minutes.
  4. 4In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Stir this mixture into the cooked rice gently.
  5. 5Place a sheet of nori on a bamboo sushi mat or a clean surface, shiny side down.
  6. 6Spread a thin layer of sushi rice over the nori, leaving a 1-inch border at the top.
  7. 7Arrange cucumber, avocado, and shrimp in a line across the rice.
  8. 8Using the mat, roll the sushi tightly away from you, pressing gently to form a cylinder.
  9. 9Seal the edge of the nori with a little water.
  10. 10Slice the roll into bite-sized pieces and serve with soy sauce, wasabi, and pickled ginger.
