Heat a medium high heat on the stove and add a little olive oil and a knob of butter to the pan.

Add a couple of torn sage leaves, rosemary, and thyme to the pan.

Crack chestnuts in half and add them to the pan.

Add 500-600 grams of leftover potatoes to the pan, breaking them up with your hand.

Add another 500-600 grams of leftover vegetables (carrots, turnips, parsnips, swede, greens) to the pan, chopped or torn.

Use a masher to mash the mixture slightly, ensuring full contact with the side of the pan.

Leave the mixture in the pan for a couple of minutes to get golden and crispy.

Mix the mixture, pat it back down into shape, and repeat this process for about 20 minutes.

After about 20 minutes, check the mixture; it should have shrunk and formed a large potato cake.

Turn the potato cake onto a board or platter.

In the same pan, add a little olive oil and some sage leaves to fry eggs.

Crack the eggs into the pan, season with black pepper, and spoon hot oil over the eggs to cook them.
