1

Cut 8 large potatoes into same-sized pieces.

2

Place potatoes into a pressure cooker and boil with the lid on for about 5 minutes until soft.

3

Drain the water from the boiled potatoes and let them sit for a couple of minutes.

4

Mash the potatoes in the pot, adding salt and black pepper to taste.

5

Transfer the mashed potatoes to a mixing bowl.

6

Roughly chop 5 cups of mixed vegetables (cooked cauliflower, cabbage, peas, carrots, brussel sprouts) and add them to the bowl with the mashed potatoes.

7

Mix the mashed potatoes and vegetables together slowly.

8

Roll the mixture into balls slightly larger than a tennis ball and then flatten them to about a quarter of an inch thick, placing them onto a tray.

9

Dust the tops of the flattened mixture with flour.

10

Heat a generous amount of vegetable oil (about a quarter cup) in a skillet until shimmering, coating the bottom of the pan.

11

Carefully place the bubble and squeak patties into the hot oil and cook until they form a crust, being careful not to turn them too soon to avoid falling apart.

12

Finish the dish with a topping of smoked salmon and serve with sour cream.
