Prepare six pieces of aluminum foil, each 12 inches by 18 inches.
In a bowl, combine 1½ pounds of 80/20 ground beef with 2 tablespoons of onion powder, 1 teaspoon of black pepper, ½ teaspoon of salt, ½ teaspoon of paprika, and ½ teaspoon of garlic powder. Mix well.
Divide the beef mixture into six equal pieces and shape them into patties, flattening them gently in the palm of your hand.
Slice potatoes thinly using a mandolin or sharp knife.
Drizzle 2 tablespoons of olive oil over the sliced potatoes and add in 1 sliced white onion and 3 medium sliced carrots.
Season the vegetables with 2 teaspoons of minced garlic, 1 teaspoon of salt, ½ teaspoon of black pepper, and ½ teaspoon of Italian seasoning. Toss to coat evenly.
On each piece of foil, create a pile of the seasoned vegetables in the center, then place one beef patty on top of each pile.
Fold the foil over the ingredients to create a sealed packet, ensuring no gaps remain.
Preheat the oven to 400°F (or prepare the grill to 400°F with indirect heat).
Place the foil packets in the oven or on the grill and cook for 30 to 35 minutes.
Once cooked, you can eat directly from the foil or serve on a plate.
