These delicate, thin crepes symbolize the sun and are typically served with a variety of toppings, from sweet to savory. Today, blini have found their way into global cuisine, celebrated for their versatility and delightful texture.

Combine warm milk in a bowl; sprinkle yeast and sugar on top. Let sit until foamy, about 5-10 minutes.
In a separate bowl, whisk together flour and salt.
Add eggs to the milk mixture; stir to combine.
Gradually add the flour mixture to the wet ingredients, mixing until smooth.
Cover the batter with a cloth and let it rise in a warm place for 1-2 hours until doubled in size.
Melt butter and let it cool slightly; then stir into the batter.
Add vanilla extract and baking powder; mix until just combined.
Heat a non-stick skillet over medium heat; lightly grease with butter.
Pour a small ladle of batter into the skillet, swirling to coat the bottom.
Cook until bubbles form on the surface, about 2-3 minutes; flip and cook until golden brown, another 1-2 minutes.
Repeat with remaining batter, greasing the skillet as needed.
Serve warm, topped with sour cream, caviar, smoked salmon, and chives.
Garnish with lemon wedges for added brightness.
